Coconut Macaroons

You’ll Need

  • 2 cups unsweetened coconut flakes (finely shredded)
  • 1¼ cups almond flour
  • 2 teaspoons vanilla
  • 1/3 cup plus 2 Tablespoons maple syrup
  • 1/2 cup melted coconut oil
  • ¼ teaspoon salt
  • Pinch of cinnamon (optional)
  • Dark chocolate for dipping if you’d like

Directions

  1. Preheat the oven to 325°F and line baking sheet with parchment paper
  2. In a large bowl, mix all ingredients.  Once combined, roll into 20-26 evenly sized balls.
  3. Place on the tray and bake in the oven at 325°F for 18-20 minutes or until lightly browned.
  4. Let cool on tray as they will continue firm up. Wait until fully cooled.
  5. Then dip in dark chocolate and if not eating right away, place in a container that can seal well. You can also freeze them.
