You’ll Need
- 2 cups unsweetened coconut flakes (finely shredded)
- 1¼ cups almond flour
- 2 teaspoons vanilla
- 1/3 cup plus 2 Tablespoons maple syrup
- 1/2 cup melted coconut oil
- ¼ teaspoon salt
- Pinch of cinnamon (optional)
- Dark chocolate for dipping if you’d like
Directions
- Preheat the oven to 325°F and line baking sheet with parchment paper
- In a large bowl, mix all ingredients. Once combined, roll into 20-26 evenly sized balls.
- Place on the tray and bake in the oven at 325°F for 18-20 minutes or until lightly browned.
- Let cool on tray as they will continue firm up. Wait until fully cooled.
- Then dip in dark chocolate and if not eating right away, place in a container that can seal well. You can also freeze them.
