Couscous with Carrots and Celery

Organic couscous, uncooked

 You’ll Need

  • 3/4 cup uncooked couscous
  • 2 finely chopped carrots
  • ¼ cup finely chopped onion
  • 2 finely chopped celery stalks
  • 1 tablespoon butter or olive oil
  • ¼ teaspoon salt
  • Fresh ground pepper to taste
  • Finely chopped parsley to garnish (optional)

Directions

Prepare couscous: boil 1 cup water, add couscous and salt to boiling water and turn off heat; cover pot and water will absorb. After water is absorbed mix in ½ tablespoon butter.

 

  • While couscous is preparing, chop all vegetables and sauté in other ½ tablespoon of butter for approximately 10 minutes (or until softened).
  • Next mix couscous and vegetables together.
  • Adjust salt and pepper.
  • An option is to top with finely chopped parsley.

 

Play with Your Food

  • Add in a ½ teaspoon of cumin
  • Add in a pinch of sage and rosemary
