Fall means football, friends, and of course—tailgating!
But who says game-day food has to be heavy or leave you feeling sluggish by halftime? With a little Mediterranean magic, you can bring bright, fresh, and totally satisfying dishes to the party that everyone will enjoy. Two of our favorite game-day heroes are Grilled Veggie Skewers and Greek Feta Wraps—portable, colorful, and packed with flavor.
These recipes are not just easy to prep, they’re also perfect for feeding a crowd on the go!
Grilled Veggie Skewers
Nothing says “tailgate fun” like food on a stick! These veggie skewers are smoky, colorful, and bursting with flavor. They bring all the charm of the grill without any of the grease—making them a lighter, tastier option that still satisfies. Just brush with an herby olive‑oil mix and grill until lightly charred—smoky, fresh, and packed with vibrant nutrients. Kids and adults will be standing in line for these!
What You’ll Need:
-
Vegetables: zucchini, bell peppers, mushrooms, red onion, cherry tomatoes, summer squash, or Brussels sprouts—mix and match!
-
Olive oil
-
Garlic powder, fresh rosemary, oregano (or dried), lemon juice, salt, pepper, optional red pepper flakes or crushed chili
What You’ll Do:
-
If you would like to create an herb infused oil, you can lightly heat oil and add in the herbs and spices of choice from above. Or you can just mix. Heating the oil slightly allows more flavors to be released.
-
Let veggies marinate briefly (even 30 mins helps) or simply brush with olive-oil + herbs mix. Or you can just brush with olive oil and a pinch of salt. But check out the Play With Your Food section for even more options.
-
Preheat the grill or a grill pan over medium heat.
-
Thread veggies onto skewers, leaving space between pieces so heat circulates.
- Grill, turning every 2–3 minutes, until veggies are tender with light char—about 8–10 minutes. Or you can roast the veggies in an oven and then skewer them for that extra food presentation touch!
Play With Your Food: Want to mix things up? Swap in seasonal veggies like Brussels sprouts or butternut squash cubes in the fall. Add halloumi or shrimp to turn these skewers into a more filling option. And don’t forget dips—serve with a tangy tzatziki, romesco, or even hummus for dunking. Or simply drizzle with lemon juice before serving.
It’s a tailgate where everyone gets to build their own flavor adventure!
Mediterranean Inspired Wraps
These wraps are the definition of handheld happiness. Packed with crisp veggies, creamy feta, and a punch of Mediterranean flavors, they’re a pre-game crowd favorite that travels well—no utensils needed!
What You’ll Need:
-
Whole‑wheat or lavash wraps or tortillas
-
Veggie Filling Ideas: chopped tomatoes, cucumber, olives, mixed greens

Protein/Fat Ideas: Mashed feta cheese or a feta spread, goat cheese or baba ganoush, hummus, chickpeas or tzatziki

Warm the wrap lightly to make it pliable.
-
Spread a thin layer of your Protein/Fat Choice down the center.
-
Add your veggie choices.
-
Fold in the sides and roll tightly. Slice in half if you like—it’s party‑ready!
