Watermelon Feta Salad

This is a perfect use for watermelons in the summer. The combination of mint and creamy avocados are so delicious and healthy for you!

You’ll Need:

  • 5 cups cubed watermelon
  • 1 heaping cup diced cucumber
  • ¼ cup thinly sliced red onions
  •  cup feta cheese
  • 1 avocadocubed
  •  cup torn mint leaves
  • optional ½ jalapeño thinly sliced
  • Salt to taste 

Dressing

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons lime juice
  • ½ garlic cloveminced
  • ¼ teaspoon sea salt

What To Do … This is so simple!

  • Make the dressing: In a small bowl, whisk together the olive oil, lime juice, garlic and salt.
  • Make the salad: Add watermelon, cucumber, and red onions onto a large plate or platter. Drizzle with half the dressing. Top with the feta, avocado, mint, and spicy pepper if using, and drizzle with remaining dressing.
  • Season to taste and enjoy!
