Cabbage, Carrots and Potato Medley

Ingredients

  • 3 1/2 teaspoons olive oil, divided
  • 2 cloves garlic, minced
  • 2 teaspoons minced ginger
  • 1/2 cup chopped onion (about half a medium onion)
  • 1/3 teaspoon cumin powder
  • 1 teaspoon turmeric powder
  • 1/3 teaspoon cinnamon powder
  • 1/4 teaspoon cloves powder (6 cloves)
  • 1/3 teaspoon black pepper
  • 1 large carrot (about 3/4 cup, sliced)
  • 2 medium potatoes, chopped
  • 1 head of cabbage, loosely chopped (You can also use just half the cabbage. The less you use the more intense the spice flavors will be).
  • 1 teaspoon salt
  • 1 Tablespoon water

Directions

  • In a large skillet or pot that can be covered, add 1 3/4 teaspoons oil and heat at medium-low. Once hot, Add garlic, ginger, and onion. Mix, cook for approximately 4 minutes.
  • Add the cumin, turmeric, cinnamon, cloves and black pepper. Mix and heat for 3 minutes to infuse the oil.
  • Next add the carrots, and potato and mix well.
  • Add cabbage a 1/2 teaspoon salt, and 1 tablespoon water. Mix well, cover and cook for 15 minutes. Stir once around 7 minutes.
  • Add another 1/2 teaspoon of salt, and the rest of the olive oil and mix. Then cover and cook for another 10 to 15 minutes or until the potatoes are tender.
