Peanut Butter Cups

Ingredients

  • 1 cup semi-sweet or dark chocolate chips
  • 1 Tablespoon powdered sugar
  • 3 Tablespoons peanut butter
  • ¼ teaspoon vanilla
  • 1 ½ teaspoons Grapeseed oil (or other type of vegetable oil)
  • Pinch of sea salt

Directions

  • Line medium or small size muffin tins with silicon or paper liners.
  • On a stove top in a double broiler melt the chocolate. Next place approximately 2 teaspoons of chocolate in the bottom of each muffin liner to total 8. Or approximately 1 teaspoon in the bottom if using the smaller muffin tins to fill 16.
  • Now freeze the muffin tins until chocolate hardens approximately 8 minutes.
  • While in freezer, mix together powdered sugar, peanut butter, a pinch of sea salt, and vanilla.
  • Remove tray from freezer and place approximately one teaspoon for large muffin tins or ½ teaspoon for small muffin tins of peanut butter mixture. Then cover the peanut butter with chocolate (divide the chocolate evenly among the cups). Freeze again.
  • When hardened place in an airtight container and refrigerate or you can also keep them frozen.

 

Play with Your Food

Use almond butter or a seed butter instead.
