Split Pea Soup

Ingredients

  • 2 small onions, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 2 medium to large potatoes
  • 2 cups of green split peas
  • 10 to 12 cups water
  • 2 bay leaves
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Directions

  • Place oil in large pot. Bring heat to medium and add in onions. Saute till translucent.
  • Then lower heat to medium low, add in garlic and saute for another 30 seconds then add in carrots, and celery and saute a bit more.
  • Now add in potatoes, split peas, bay leaves, 10 cups water (start with this amount of water) and 1 1/2 teaspoons salt (Start with this amount of salt and adjust accordingly as soup cooks and flavors develop and meld.). Bring to boil, then lower to simmer.
  • Stir and taste soup occasionally, adjust salt and add in pepper as you go. If you want to add more liquid do so as the soup cooks down.
  • Soup will cook down to yield a uniformed, mashed up consistency without the need for a blender.

Soup freezes well.
