Sweet Potato Haystack

Ingredients

• 1 medium sweet potato
• 1/2 medium onion
• 1 tablespoon olive oil
• 1/4 teaspoon salt

Directions

• Preheat oven to 350.
• Leave skin on sweet potato and cut into matchstick size.
• Thinly slice onion
• Toss onion and sweet potato with olive oil and salt.
• Place on baking sheet lined with parchment paper or baking mat.
• Bake for 10 mi
• Bake for approximately 20 minutes.

This tastes great topped with our Barley Chili recipe.
