Roasted Brussels Sprouts with (or without) Bacon

You’ll Need

  • 1 pound brussels sprouts
  • Olive oil (about 2 tablespoons)
    • or 2 pieces of thick cut bacon and one tablespoon olive oil
    • or about 1 tablespoon bacon grease and 1 tablespoon olive oil
  • Salt and pepper

Directions if using bacon

*Read through directions before starting to help reduce cooking and cleaning time.

  • Preheat oven to 400 F.
  • Place thick cut bacon on baking sheet.
  • Bake for ten minutes and assess doneness for you. If you want bacon to be more crispy flip and bake for a few more minutes.
  • Then take out baking sheet and remove bacon.
  • While bacon is prepping cut brussels sprouts. Remove ends but keep brussels sprout intact. Cut into 4 halves if large and two halves if small.
  • Place brussels sprouts on baking sheet in the bacon grease and add one tablespoon of olive oil and turn to coat the brussels sprouts. Also add in salt and pepper to taste.
  • Now bake for 12 minutes, take out of oven and flip and turn them a bit to cook on all sides.
  • Then bake for another 12 minutes or until consistency you like is reached.
  • When brussels sprouts are baking, finely chop bacon strips into bacon bits.
  • In your serving bowl, toss all together, adjust salt and pepper as needed.

Directions is not using bacon

  • On the baking sheet, toss brussels sprouts with 2 tablespoons olive oil, salt, and pepper.
    • Or 1 tablespoon bacon grease and one tablespoon olive oil, salt, and pepper
  • Proceed as above (subtracting the bacon steps).
