{"id":99,"date":"2016-03-18T16:00:00","date_gmt":"2016-03-18T16:00:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2016\/03\/18\/mexican-pasta-soup\/"},"modified":"2017-01-21T21:06:09","modified_gmt":"2017-01-22T02:06:09","slug":"mexican-pasta-soup","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=99","title":{"rendered":"Mexican Pasta Soup"},"content":{"rendered":"<div><em>\u00a0While\u00a0the soup is simmering away put on some salsa music and enjoy dancing.<\/em><\/div>\n<div style=\"clear: both; text-align: center;\"><\/div>\n<p><b>You\u2019ll Need<\/b><\/p>\n<ul>\n<li>6 ounces Vermicelli, broken into 1-inch pieces<\/li>\n<li>3 \u00bd cups chicken stock<\/li>\n<li>2 cups water<\/li>\n<li>1, 10 oz. can diced tomatoes and green chilies, undrained<\/li>\n<li>2 tablespoons fresh cilantro, minced<\/li>\n<li>1 teaspoon chili powder<\/li>\n<li>1\/2 teaspoon cumin<\/li>\n<li>1\/2\u00a0pound smoked sausage<\/li>\n<li>1 package frozen corn<\/li>\n<li>1, 14 1\/2 oz. can black beans, rinsed and drained<\/li>\n<li>1\u00a0tablespoon lime juice (more to taste)\n<div><\/div>\n<\/li>\n<\/ul>\n<p><b>For the broth<\/b><br \/>\nCombine stock, water, tomatoes, cilantro, chili powder and cumin in a Dutch oven.<\/p>\n<p><b>Bring to a boil<\/b><br \/>\nCover, reduce heat and simmer 10 minutes.<\/p>\n<p><b>For the soup goodies<\/b><\/p>\n<ul>\n<li>Cut the sausage in half lengthwise then thinly slice.<\/li>\n<li>Add meat, pasta, corn, and black beans to broth.<\/li>\n<li>Cover and simmer 10-12 minutes or until pasta is cooked.<\/li>\n<li>Stir in lime juice.<\/li>\n<\/ul>\n<p><b>To serve<\/b><br \/>\nLadle into bowls.
