Give this unique fall flavored and colorful salad a try&#8230;.<\/i><\/span><br \/>\n<b style=\"font-family: arial, helvetica, sans-serif;\"><br \/>\n<\/b><b style=\"font-family: arial, helvetica, sans-serif;\">You\u2019ll Need<\/b><\/p>\n<ul>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">\u00bd pound raw beets, trimmed <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">3 heads of Belgian Endives, medium <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">1 red onion <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">1 Tablespoon Dijon mustard <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">1 Tablespoon red wine vinegar <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">salt and pepper<\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">3 Tablespoons olive oil <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">4 Tablespoons finely chopped parsley <\/span><\/li>\n<\/ul>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b>Directions<\/b><b><\/b><\/span><\/div>\n<ul>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Place the beets in a saucepan and add water to cover.<\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Bring to a boil until the beets are tender, about 30 minutes, depending on the size or age of the beets. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Drain and let cool. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Remove the skins and slice the beets. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Trim off the bottom of the endives and cut them into 1 1\/2 inch strips. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Drop the pieces into cold water. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Drain and pat dry. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Peel and slice the onion. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Combine the mustard, vinegar, salt and pepper in a salad bowl. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Add the oil and blend well with a wire whisk. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Add the beets, endive, onion and parsley. <\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Toss well and serve.<\/span><\/li>\n<\/ul>\n<div>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>Ever wondering what to do with Belgian Endives?
