Give this one a try but experiment with your own veggies too.<\/p>\n<p><strong>You\u2019ll Need:<\/strong><\/p>\n<ul>\n<li>1\/3 cup chopped onion<\/li>\n<li>2\/3 cup chopped green pepper<\/li>\n<li>1 tablespoon butter<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 \u00bd cups scrubbed, chopped zucchini<\/li>\n<li>2 minced garlic cloves<\/li>\n<li>2 teaspoons salt<\/li>\n<li>\u00bc cup peeled, seeded and chopped tomatoes<\/li>\n<li>6 large eggs, beaten<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>In skillet, cook onions and green pepper in butter and 1 tablespoon olive oil stirring, 5 minutes.<\/li>\n<li>Add zucchini, cook covered 4 minutes.<\/li>\n<li>Add garlic, salt and tomato, cook stirring, 5 minutes.<\/li>\n<li>Transfer to bowl.<\/li>\n<li>Cool.<\/li>\n<li>Add eggs.<\/li>\n<li>Over medium heat, heat 1 tablespoon olive oil in 10&#8243; ovenproof skillet.<\/li>\n<li>Add egg mixture, cook 3-5 minutes till underside is set.<\/li>\n<li>Bake preheated 400 F degrees oven for 1 to 2 minutes till puffed and golden.<\/li>\n<li>Cut into wedges.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Frittatas are a great way to use up veggies that are almost out the door.
