{"id":441,"date":"2008-06-18T14:12:00","date_gmt":"2008-06-18T14:12:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2008\/06\/18\/greek-stuffed-tomatoes\/"},"modified":"2017-02-02T13:17:09","modified_gmt":"2017-02-02T18:17:09","slug":"greek-stuffed-tomatoes","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=441","title":{"rendered":"Greek Stuffed Tomatoes"},"content":{"rendered":"<p>PREP TIME 15 Min<br \/>\nCOOK TIME 15 Min<br \/>\nREADY IN 30 Min<\/p>\n<p><strong>You\u2019ll Need<\/strong><\/p>\n<div>\n<div>\n4 large ripe tomatoes<br \/>\nsalt and pepper to taste<br \/>\n1 tablespoon olive oil<br \/>\n1 cucumber, peeled and diced<br \/>\n1\/2 cup yogurt<br \/>\n8 ounces black Greek olives, pitted and sliced<br \/>\n1\/4 cup chopped fresh basil<br \/>\n1 teaspoon sugar<br \/>\n2 cups crumbled feta cheese<br \/>\n1\/4 cup chopped fresh parsley<\/div>\n<div><strong>DIRECTIONS<\/strong><\/div>\n<div>\nPreheat oven to 350 degrees F (175 degrees C).<\/div>\n<div>\nSlice tomatoes in half, scoop out seeds, and place in a baking dish sliced-side up. Sprinkle with and salt and pepper . Bake for 5 minutes. Remove tomatoes from oven, drizzle with olive oil, and bake an additional 10 minutes.<\/div>\n<div>\nWhile baking tomatoes, mix together cucumber, yogurt, olives, basil, and sugar. Stir in feta cheese. Season to taste with salt and pepper.<\/div>\n<div>\nRemove tomatoes from oven, fill with cucumber mixture, and sprinkle with parsley.
