Thank you Kristy!<\/em><\/p>\n<p><strong>You\u2019ll Need:<\/strong><\/p>\n<ul>\n<li>1 lb. rotini pasta<\/li>\n<li>2 medium onions (sliced thin)<\/li>\n<li>1\/2 bag of frozen spinach<\/li>\n<li>1 pound boneless, skinless chicken breasts cut into 1 inch pieces (or chicken tenders, cut into 1 inch pieces), marinated in your favorite Italian-style dressing<\/li>\n<li>Olive oil<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>Salt<\/li>\n<li>Pepper<\/li>\n<li>Ground red pepper (to taste)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>In dutch oven, saute onions in olive oil until clear.<\/p>\n<p>Add spinach &#8211; cook until soft.<\/p>\n<p>Remove onion\/spinach mixture and place in oven on warm setting.<\/p>\n<p>Cook diced chicken on medium heat (15-20 minutes), or until done.<\/p>\n<p>While chicken is cooking, cook pasta according to package instructions (using dutch oven or pasta pot).<\/p>\n<p>Add cooked chicken to onion\/spinach mixture in oven. Keep warm.<\/p>\n<p>Saute garlic in approximately 1\/4 cup olive oil (use pasta pot).<\/p>\n<p>Combine pasta with spinach and onion mixture in pot with garlic.<\/p>\n<p>Season with salt, pepper and ground red pepper (for an extra kick!), to taste.<\/p>\n<p>(Serves 6-8)<\/p>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Submitted by Kristy at Eckert Seamans.
