Thank you, Linda!<\/em><\/p>\n<p><strong>You&#8217;ll Need:<\/strong><\/p>\n<ul>\n<li>8 (6 to 8 inch) flour tortillas<\/li>\n<li>2 cooked chicken breast halves<\/li>\n<li>1\/2 c. Sliced roasted red peppers*<\/li>\n<li>1\/2 c. Sliced artichoke hearts<\/li>\n<li>1\/2 c. Chopped red onions<\/li>\n<li>1\/2 c. Sliced mushrooms<\/li>\n<li>1\/4 c. Shredded monterey or pepper jack cheese per quesadillas<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Directions:<\/p>\n<p>Lay out the tortillas.<\/p>\n<p>Shred the chicken and mix with everything except for the cheese.<\/p>\n<p>Put equal portions of the chicken\/vegetable mixture on each tortilla.<\/p>\n<p>Add 1\/4 c. of cheese to the top of each mixture.<\/p>\n<p>Fold tortillas over and cook in a non-stick pan on each side until slightly browned, about 3 minutes per side.<\/p>\n<p>Note: the chicken\/vegetable mixture can be made ahead of time and refrigerated until time to cook.<\/p>\n<p>* these can be from a jar, packed in water.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Submitted by Linda at Eckert Seamans.
