Drained Capers<\/li>\n<li>1 Clove Garlic chopped<\/li>\n<li>Juice of 1 Lemon<\/li>\n<li>1 tsp. Anchovy Paste (optional)<\/li>\n<li>\u00bd tsp. Dijon Mustard<\/li>\n<li>Sea Salt &amp; Fresh Ground Pepper<\/li>\n<li>\u00bd cup Olive Oil plus 2 tbsp. Olive Oil for grilling<\/li>\n<li>2 Zucchini cut in half lengthwise (small to medium)<\/li>\n<li>1-1\/4 lbs. Large Shrimp peeled and deveined<\/li>\n<li>1-pint cherry tomatoes halved<\/li>\n<li>12 oz Spaghetti or Linguine<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<p>Pulse parsley, capers, garlic, lemon juice, anchovy, paste, mustard, salt and pepper in a food processor or blender, just enough to chop.<\/p>\n<p>With the machine running add \u00bd cup of oil in a thin stream to puree the sauce.<\/p>\n<ul>\n<li>Set aside.<\/li>\n<li>Heat the grill or a broiler.<\/li>\n<li>Brush the zucchini with 1 teaspoon of oil and sprinkle with salt.<\/li>\n<li>Grill or broil both sides until just done 5 to 10 minutes.<\/li>\n<li>When cool to handle, cut crosswise in \u00bd\u201d pieces and place in a large bowl.<\/li>\n<li>Thread shrimp onto skewers, brush with remaining 1-tablespoon oil and season.<\/li>\n<li>Grill or broil until done, about 4 minutes.<\/li>\n<li>Remove from skewers.<\/li>\n<li>Add the shrimp and halved tomatoes to the zucchini in the bowl.<\/li>\n<li>Cook the spaghetti until done, drain, then add the ingredients in the bowl and toss with desired amount of sauce.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Thank you, Linda B!\u00a0 You&#8217;ll Need: 2\/3 Cup Parsley Leaves or 1\/3 Cup each Parsley &amp; Basil 3 tbsp.
