A fun and yummy complement to the holiday meal.<\/i><br \/>\n<i><br \/>\n<\/i><strong>You\u2019ll Need: <\/strong><\/p>\n<ul>\n<li>1\/3 cup sweet or dry sherry or Madeira<\/li>\n<li>2\/3 cup raisins<\/li>\n<li>2 pounds sweet potatoes, baked, boiled or steamed until tender<\/li>\n<li>\u00bd cup unsalted butter, melted<\/li>\n<li>4 large eggs<\/li>\n<li>2 cups milk<\/li>\n<li>1 cup packed brown sugar<\/li>\n<li>\u00bd teaspoon mace<\/li>\n<li>Pinch of salt<\/li>\n<li>Grated zest of 1 orange<\/li>\n<li>2 Tablespoons lemon juice<\/li>\n<li>\u00bc cup plus 1 Tablespoon dark rum<\/li>\n<\/ul>\n<p><strong>Directions: <\/strong><\/p>\n<ul>\n<li>Pour the sherry or Madeira over the raisins in a small bowl; let stand for 30 minutes or longer.<\/li>\n<li>Preheat the oven to 375 F with a rack in the center.<\/li>\n<li>Butter an 11 inch oval gratin dish or other shallow basking dish; set aside.<\/li>\n<li>Halve the cooked sweet potatoes; scoop out the flesh and place it in a large bowl.<\/li>\n<li>Add \u00bc cup plus 1 Tablespoon of the melted butter.<\/li>\n<li>Add the eggs, one at a time, and beat with an electric mixer into the sweet potato-butter mixture.<\/li>\n<li>Add the milk, 1\/3 cup of the brown sugar, the mace, salt and orange zest and beat until blended.<\/li>\n<li>Beat in the raisins and their soaking liquid.<\/li>\n<li>Scoop the mixture into the baking dish.<\/li>\n<li>For the Rum Glaze:<\/li>\n<li>Warm the remaining 3 Tablespoons of melted butter in a small skillet.<\/li>\n<li>Stir in the remaining 2\/3 cup brown sugar and the lemon juice;<\/li>\n<li>Cook over medium-high heat, stirring occasionally, until bubbly, 3 to 5 minutes.<\/li>\n<li>Stir in the rum and return the mixture to a boil.<\/li>\n<li>Drizzle the rum glaze randomly over the surface of the sweet potato mixture.<\/li>\n<li>Bake until the pudding is set and the glaze is bubbly, about 45 minutes.<\/li>\n<li><\/li>\n<li>Serve it warm topped with whipped cream flavored with vanilla and dark rum.<\/li>\n<\/ul>\n<p>Serves 10-12<\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a jazzed up sweet potato dish.
