Okay, the vat-o-grease we fried the fish in was horrid, but then I do have to say that we made our own hushpuppies fresh every day as well as the batter for the fish. I loved that fish, and somehow we always had a few left over at the end of my shift that, as a good employee, I volunteered to clean up and take home with me. <\/span><\/div>\n<div style=\"mso-outline-level: body-text; page-break-after: auto; text-indent: 0in;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00a0<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">In the absence of a bubbling black pit of hydrogenated oil to cook your fish in, this fish recipe has actually become my new favorite. <\/span><\/div>\n<div><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>\u00a0<\/b><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>You\u2019ll need:<\/b><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">3 tilapia fillets<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc cup olive oil<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">Salt and pepper<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 Tablespoons fresh rosemary<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">4 cloves garlic, minced<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">Sprinkle of cayenne<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00be cup dry sherry<\/span><\/div>\n<div><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>Prepare to fry the fillets<\/b><\/span><\/span><\/div>\n<div><b><\/b><span style=\"font-family: Arial, Helvetica, sans-serif;\">Sprinkle salt and pepper over the fish and set aside.\u00a0 Over a medium flame, saut\u00e9 the garlic and three-fourths of the rosemary for just a couple of minutes until the garlic just starts to brown.<\/span><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>add the fillets<\/b><\/span><\/span><\/div>\n<div><b><\/b><span style=\"font-family: Arial, Helvetica, sans-serif;\">Set the fillets side by side into the pan and sprinkle with cayenne and the rest of the rosemary to your taste.\u00a0 After 3 minutes, flip the fish and sprinkle with the cayenne and rosemary again. Continue to cook until done through.<\/span><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>prepare the sauce<\/b><\/span><\/span><\/div>\n<div><b><\/b><span style=\"font-family: Arial, Helvetica, sans-serif;\">Remove the fish to a warm plate and scrape up the bits of fish and garlic from the bottom of the pan with the sherry.\u00a0 Cook this down over a medium-high flame until reduced by over half. It should be almost syrupy by this time. Serve the sauce hot over the filet.<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00a0<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">COOKING NOTES:<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">When judging when to flip your fillet, look at the edges. You\u2019ll see that they start to get opaque. For most thin filets, this means that you\u2019re ready to turn it over. To make sure it\u2019s done all the way through, notice when the center responds to gentle prodding by flaking apart.
