Roughly chop the orange rinds and place in the cleaned duck cavity. Put the stuffed duck on a baking rack over a baking sheet with 1\/2-inch of water. Bake until skin turns golden brown and lightly crisps, about 30 minutes.\u00a0<\/span><\/div>\n<div style=\"line-height: 23px; margin-bottom: 9px; outline-color: initial; outline-style: none; outline-width: initial; padding: 0px;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Reduce temperature to 300 degrees and continue cooking until duck reaches an internal temperature of 170 degrees, about 1 hour.<\/span><\/div>\n<div style=\"line-height: 23px; margin-bottom: 9px; outline-color: initial; outline-style: none; outline-width: initial; padding: 0px;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>Meanwhile<\/b><\/span><\/div>\n<div style=\"line-height: 23px; margin-bottom: 9px; outline-color: initial; outline-style: none; outline-width: initial; padding: 0px;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">In a medium heavy saucepan\u00a0combine the orange juice, zest and sugar\u00a0over medium high heat and reduce to 3\/4 cup. Add the bitters to the orange juice\u00a0and set aside.<\/span><\/div>\n<div style=\"line-height: 23px; margin-bottom: 9px; outline-color: initial; outline-style: none; outline-width: initial; padding: 0px;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Add hot duck stock to reduced orange gastrique and simmer\u00a0over medium low heat for 10 minutes to reduce. Add the thickener to &#8230; thicken!!\u00a0<\/span><\/div>\n<div style=\"line-height: 23px; margin-bottom: 9px; outline-color: initial; outline-style: none; outline-width: initial; padding: 0px;\"><span style=\"font-family: Arial, Helvetica, sans-serif;\">Remove duck from roasting pan, and discard the fat from pan. Remove orange rinds from duck cavity. Let rest 10 minutes before carving.<\/span><\/div>\n<\/div>\n<p><span style=\"background-color: white; color: #3d3d3d; font-family: Arial, Helvetica, sans-serif; line-height: 23px;\">Add the Grand Marnier to the <\/span><span style=\"background-color: white; color: #3d3d3d; font-family: Arial, Helvetica, sans-serif; line-height: 23px;\">roasting pan and place over 2 burners on medium high heat. You will use this to deglaze the pan<\/span><span style=\"background-color: white; color: #3d3d3d; font-family: Arial, Helvetica, sans-serif; line-height: 23px;\">, scraping continuously with a large wooden spoon.\u00a0<\/span><br \/>\n<span style=\"background-color: white; color: #3d3d3d; font-family: Arial, Helvetica, sans-serif; line-height: 23px;\"><br \/>\n<\/span><br \/>\n<span style=\"background-color: white; color: #3d3d3d; font-family: Arial, Helvetica, sans-serif; line-height: 23px;\">Reduce for 5 to 10 minutes.
