Enjoy with anything from meats to veggies.\u00a0<\/i><br \/>\n<i><br \/>\n<\/i><a style=\"clear: right; float: right; margin-bottom: 1em; margin-left: 1em;\" href=\"https:\/\/www.willclower.com\/blog\/wp-content\/uploads\/2013\/07\/eggplant-1.jpg\"><br \/>\n<\/a><b><\/b><br \/>\n<b>Marinade<\/b><\/p>\n<ul>\n<li>1\/4 cup soy sauce<\/li>\n<li>1\/4 cup Sake<\/li>\n<li>2 Tablespoon olive oil<\/li>\n<li>2 Tablespoon sesame oil<\/li>\n<li>3 Tablespoon light brown sugar<\/li>\n<li>2 Tablespoon rice vinegar<\/li>\n<li>2 garlic cloves, crushed or minced<\/li>\n<li>1 teaspoon ginger root, freshly grated<\/li>\n<\/ul>\n<p><b>Directions for Marinade <\/b><\/p>\n<p>Combine all marinade ingredients in a small container. Mix well. Let stand while you prep the eggplants.<\/p>\n<p><b>Eggplant<\/b><\/p>\n<ul>\n<li>2 eggplants, (approx 1 pound each)<\/li>\n<li>Salt<\/li>\n<li>2 scallions, green parts only, thinly sliced<\/li>\n<li>1\/2 Red bell pepper, finely diced<\/li>\n<li>1 tbsp. sesame seeds<\/li>\n<\/ul>\n<p><b>Directions for Eggplants<\/b><\/p>\n<p>Peel eggplants and cut into 1\/2-inch-thick slices. Salt lightly and place in a colander for 30 minutes, then rinse and drain.<\/p>\n<p>Prepare grill. Brush the eggplant slices generously on both sides with marinade.\u00a0Grill slices until nicely browned and tender.<\/p>\n<p>Cut into strips and place in a serving container. Stir in the scallions. Add enough additional marinade to moisten and flavor the eggplant to taste.
