It\u2019s actually the bits of butter smeared throughout the dough. When the oven heats up, they expand, creating little pockets between layers of the crust.<\/span><br \/>\n<span style=\"font-family: Arial, Helvetica, sans-serif;\">So as you&#8217;re putting this together, you&#8217;ll spread the dough with the heal of your hand \u2013 what the French call \u201cfraisage\u201d\u2014 to get nice layers of butter spread thinly through the dough that expand into a delicate flaky pie crust.<\/span><\/p>\n<p><span style=\"font-family: Arial, Helvetica, sans-serif;\">By the way, don\u2019t blow off the refrigeration. The dough needs to relax (don\u2019t we all), and if it doesn\u2019t get this time period it will shrink up when stretched or heated.<\/span><br \/>\n<span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">This pie crust is excellent, and simple to make. Don\u2019t be intimidated by the length of the directions, as this is mostly just descriptions of what you\u2019ll be doing. Once you get it, it only takes a few minutes to throw together something that blows away anything in your freezer section!<\/span><br \/>\n<span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><strong><span style=\"font-family: Arial, Helvetica, sans-serif;\">You\u2019ll Need: <\/span><\/strong><\/p>\n<ul>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 cups all purpose flour<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 teaspoon salt <\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc teaspoon sugar <\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 1\/2 sticks cold butter <\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">~\u00bd cup ice water<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: Arial, Helvetica, sans-serif;\">What You&#8217;ll Do:<\/span><\/strong><\/p>\n<ul>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Cube the butter by cutting it in half longways, then turn it a quarter turn and cut them longways again.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Now cut it \u201cshortways\u201d into cubes.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Put everything except the butter and water into a mixing bowl.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Mix around the dry ingredients well, and then add the butter.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Using your fingertips, quickly squeeze the butter cubes into the flour mixture to make it mealy.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Make sure the finer bits of flour that aren\u2019t incorporated get pulled up from the bottom of the bowl.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Slowly work your ice water into the dough, forming a ball.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Now put it on a floured board.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Spread the butter evenly through the dough by smearing it, little by little, from the middle outward with the heel of your hand.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Wad it back into a ball, cover with wax paper, and refrigerate for at least an hour.<\/span><\/li>\n<li>You can do this ahead of time because it keeps quite well \u2014 two to three days in the refrigerator or a week in the freezer.<\/li>\n<\/ul>\n<p><span style=\"font-family: Arial, Helvetica, sans-serif;\"><strong>Making the pie crust:<\/strong> <\/span><\/p>\n<ul>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">When you\u2019re ready to make the pie, put the dough on a flour-dusted board.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Sprinkle a bit of flour on top of the dough, too.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">With a rolling pin, roll outward from the center. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\"><em>Be careful not to press too hard.<\/em><\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Direct your movements outward from the center at even angles so your pie crust stays mostly round. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">If you find that it cracks at the edges, just pinch it back together. <\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">You may also find that it begins to stick to your rolling pin, and so just dust with a bit more flour. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">Keep at this until your crust is about 1\/8 inch thin.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Make it round by pinching cracked edges and corralling the more adventurous portions. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">On your last roll out from the center, take the pin to the edge of the crust.<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">As you roll it back toward the center, let the dough curl up with the rolling pin until it is just about on top of the dough still on the board. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">Put one hand between these two layers, and the other hand beneath the main part of the crust.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: Arial, Helvetica, sans-serif;\">Gently lift and set into your pie pan. <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">Mold into the edges with your fingers.<\/span><br \/>\n<span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/span><strong><span style=\"font-family: Arial, Helvetica, sans-serif;\">Play With Your Food! Make additions to your crust!<\/span><\/strong><\/p>\n<ul>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Depending on the filling, they can be flavored with a sprinkle of cocoa, some citrus zest, cinnamon, or even some very finely crushed nuts like almonds. For a meat pie, try celery seed!<\/span><\/li>\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">If you are making a pastry like turnovers or fruit tart shell, reduce the flour to 1 cup, add in 1 tablespoon of sugar, eliminate the water altogether, and cut in 4 \u00bd oz cream cheese (softened of course). <\/span><span style=\"font-family: Arial, Helvetica, sans-serif;\">Once they are all blended, gather this dough as before, and refrigerate before rolling out.\u00a0<\/span><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>What makes a flaky crust?
