{"id":294,"date":"2014-02-11T08:30:00","date_gmt":"2014-02-11T08:30:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2014\/02\/11\/macaroni-and-cheese\/"},"modified":"2017-02-02T11:30:58","modified_gmt":"2017-02-02T16:30:58","slug":"macaroni-and-cheese","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=294","title":{"rendered":"Macaroni and Cheese"},"content":{"rendered":"<p><i>You will never be able to open the boxed stuff again after sampling this easy to prepare recipe.<\/i><br \/>\n<i><br \/>\n<\/i><strong>You\u2019ll Need<\/strong><\/p>\n<ul>\n<li>1 pinch of salt<\/li>\n<li>1 splash extra-virgin olive oil<\/li>\n<li>2 cups pasta<\/li>\n<li>2 Tablespoons unsalted butter<\/li>\n<li>1 Tablespoon flour<\/li>\n<li>\u00bd cup half-and-half<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>1(+) cups grated sharp cheddar cheese<\/li>\n<\/ul>\n<p><strong>Directions<br \/>\n<\/strong>To a medium sauce pan<br \/>\n<strong>Add<\/strong> the salt and olive oil to 4 cups of water.<br \/>\nBring it to a <strong>boil<\/strong>, and then add the pasta for about 6 \u2013 7 minutes.<br \/>\nThe pasta should be almost, but not quite, tender when you strain it off.<\/p>\n<p>While the pasta is boiling <strong>melt<\/strong> the butter over medium heat in a second saucepan.<br \/>\n<strong>Add<\/strong> the flour, <strong>mix<\/strong> them thoroughly together, and allow the roux to brown only slightly.<br \/>\n<strong>Add<\/strong> the half-and-half, bring to a <strong>simmer<\/strong> with the salt and pepper.<br \/>\nLet these flavors bubble into each other for a few minutes.<br \/>\n<strong>Remove<\/strong> the and <strong>whisk<\/strong> until smooth.<br \/>\nThen <strong>add<\/strong> the grated cheese to complete the sauce, and let it simmer until the pasta is done.<br \/>\nCorrect the seasoning.<br \/>\nTo finish it off, just drain the pasta and then throw it back into the sauce.<br \/>\nTurn them into each other over medium heat for ~2 minutes. That\u2019s it!<\/p>\n<p><strong>Time to the Table<\/strong>: 15 minutes<\/p>\n<p><strong>Tricks of the Trade<br \/>\n<\/strong>The only real trick to this is to remove the pasta from the water a bit underdone. It finishes cooking when you add it back to the sauce.<\/p>\n<p><strong>Play With Your Food!<br \/>\n<\/strong>Try \u00bd cup of Parmesan instead of the cheddar.<br \/>\nIf your kids are like most, they turn up their noses for the weirdest reasons&#8211; like the color of the cheese sauce. If this is the case, try white cheddars, or yellow, or a combination.
