{"id":293,"date":"2014-02-11T09:00:00","date_gmt":"2014-02-11T09:00:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2014\/02\/11\/flounder-mediterranean\/"},"modified":"2017-02-02T11:30:33","modified_gmt":"2017-02-02T16:30:33","slug":"flounder-mediterranean","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=293","title":{"rendered":"Flounder Mediterranean"},"content":{"rendered":"<p><b>You\u2019ll Need<\/b><\/p>\n<div>\n<ul>\n<li>5 roma (plum) tomatoes<\/li>\n<li>2 tablespoons extra virgin olive oil<\/li>\n<li>1\/2 Spanish onion, chopped<\/li>\n<li>2 cloves garlic, chopped<\/li>\n<li>1 pinch Italian seasoning<\/li>\n<li>1\/4 cup white wine<\/li>\n<li>24 kalamata olives, pitted and chopped<\/li>\n<li>4 tablespoons capers<\/li>\n<li>1 teaspoon fresh lemon juice<\/li>\n<li>6 leaves fresh basil, chopped<\/li>\n<li>3 tablespoons freshly grated Parmesan cheese<\/li>\n<li>1 pound flounder fillets<\/li>\n<li>6 leaves fresh basil, torn<\/li>\n<\/ul>\n<div>\n<b>DIRECTIONS<\/b><\/div>\n<p><b><\/p>\n<p><\/b><\/p>\n<div><b><\/b>Preheat oven to 425 degrees F (220 degrees C).<\/div>\n<div>Bring a saucepan of water to a boil. Plunge tomatoes into the boiling water, and immediately remove to a medium bowl of ice water. Drain, and remove skins. Chop, and set aside.<\/div>\n<div>Heat olive oil in a skillet over medium heat, and saute onion until tender. Stir in garlic and Italian seasoning. Stir in tomatoes, and cook until tender. Mix in wine, olives, capers, lemon juice, and 1\/2 the basil. Reduce heat, blend in Parmesan cheese, and cook until the mixture is reduced to a thick sauce, about 15 minutes.<\/div>\n<div>Place flounder in a shallow baking dish.
