If you told them you made Parmesan risotto with pine nuts, they\u2019d be so tr\u00e8s impressed with your cooking prowess. But risotto is just rice that dressed for dinner. Don\u2019t be intimidated by dishes like risotto, because they\u2019re dead easy to make and delicious to boot!\u00a0\u00a0 <\/span><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold; mso-fareast-font-family: 'Arial Unicode MS';\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>You\u2019ll Need<\/b><\/span><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">3 tablespoons unsalted butter<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bd onion, minced<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 cup rice<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc cup dry white wine<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 cups chicken stock, heated<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc cup pine nuts<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bd cup Parmesan cheese<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc cup parsley, chopped<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">Salt and pepper to taste<\/span><\/div>\n<div><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold; mso-fareast-font-family: 'Arial Unicode MS';\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>In a heavy-bottomed sauce pan<\/b><\/span><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">Heat the butter over a medium flame and saut\u00e9 the onion until it softens (about 4 minutes). Increase the heat to medium high and add the rice. Be sure to turn over the rice so that all the grains are coated in the butter. Add the wine and let it cook into the rice for another 2 minutes or so.<\/span><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold; mso-fareast-font-family: 'Arial Unicode MS';\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>Now for the liquid<\/b><\/span><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">You will add the heated chicken stock a little at a time. Pour in enough to just cover the rice (about \u00bd cup), and only stir until you are certain that the liquid has come in contact with all the rice. Wait until the stock as cooked down into the rice before adding another batch of the stock. Continue in this manner until the stock has been fully incorporated into the rice. This should take about 25 minutes, and the rice should be just barely done.<\/span><\/div>\n<div><\/div>\n<div><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold; mso-fareast-font-family: 'Arial Unicode MS';\"><span style=\"font-family: Arial, Helvetica, sans-serif;\"><b>To finish<\/b><\/span><\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">Toss with the pine nuts, Parmesan, and parsley. Salt and pepper to taste.<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00a0<\/span><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">COOKING NOTES!!<\/span><\/div>\n<div><\/div>\n<div><span style=\"font-family: Arial, Helvetica, sans-serif;\">The key will be in the adding of the stock to the rice. You want each liquid addition to just cover the grains and then cook down almost completely before you add the next one.
