Ever try couscous? Try this wonderful recipe that incorporates this really ancient and healthy grain today.<\/i><\/p>\n<div><\/div>\n<p><strong>What you Need<\/strong><\/p>\n<ul>\n<li>2 \u00bd c uncooked couscous<\/li>\n<li>1 tbsp olive oil<\/li>\n<li>1 c. hot water<\/li>\n<li>\u00bd c. butter (1 stick)<\/li>\n<li>\u00bd c. minced onion<\/li>\n<li>3 \u00bd tbsp curry powder<\/li>\n<li>2 tbsp lemon juice<\/li>\n<li>1 tsp salt<\/li>\n<li>6 drops Tabasco sauce<\/li>\n<li>\u00bd c. Toasted Pinenuts<\/li>\n<li>\u00bd c. currants<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ul>\n<li>Place the couscous in a bowl.<\/li>\n<li>Add the olive oil and rub the couscous with your hands to thoroughly coat each grain.<\/li>\n<li>Add the hot water and stir well until the water is absorbed.<\/li>\n<li>In a 10-inch saute pan, melt the butter over medium-low heat.<\/li>\n<li>Add the onion and cook gently until it is soft, about 10 minutes.<\/li>\n<li>Add the curry powder and cook another 2 minutes, stirring.<\/li>\n<li>Do not brown the curry powder or it will become bitter.<\/li>\n<li>Add the couscous, lemon juice, salt, Tabasco, pine nuts, and currants.<\/li>\n<li>Stir well to distribute the seasonings.<\/li>\n<li>Cook until couscous is hot and serve.<\/li>\n<\/ul>\n<p>Note: This can be made up to a week in advance and reheated, covered, in a 350F oven for about 15 minutes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>There are so many nutritious and delicious grains out there and many are so easy to cook.
