{"id":263,"date":"2014-11-19T08:00:00","date_gmt":"2014-11-19T08:00:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2014\/11\/19\/turkey-pot-pie\/"},"modified":"2017-02-02T10:46:46","modified_gmt":"2017-02-02T15:46:46","slug":"turkey-pot-pie","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=263","title":{"rendered":"Turkey Pot Pie"},"content":{"rendered":"<p><em>With Thanksgiving right around the corner it&#8217;s good to have some recipes to make with all that leftover turkey&#8230;<\/em><\/p>\n<p>Time to the Table: 60 minutes<br \/>\nYield: Serves 10<\/p>\n<p><strong>You\u2019ll Need<\/strong><\/p>\n<ul>\n<li>1 piecrust with top and bottom<\/li>\n<li>2 cups cooked turkey, chopped<\/li>\n<li>2 Tablespoons plus \u00bd stick unsalted butter<\/li>\n<li>\u00bd cup onions, chopped<\/li>\n<li>\u00bd cup carrots, chopped<\/li>\n<li>\u00bd cup celery, chopped<\/li>\n<li>\u00bd cup mushrooms, sliced<\/li>\n<li>\u00bd cup all-purpose flour<\/li>\n<li>2 cups chicken or turkey stock<\/li>\n<li>3 Tablespoons dry sherry<\/li>\n<li>1 cup half-and-half<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>1 Tablespoon minced fresh rosemary or 1 teaspoon dried<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><br \/>\nIn a large sauce pan saut\u00e9 veggies in 1 Tablespoon of butter until they just soften and remove.<br \/>\nSaut\u00e9 chicken in a second Tablespoon of butter until browned, but not crispy.<br \/>\nRemove.<br \/>\nOver a medium flame, add the remaining \u00bd stick butter, and then the flour.<br \/>\nStir these until the roux is chestnut brown.<br \/>\nAdd the stock and whisk until all the roux is incorporated.<br \/>\nBring this mixture to boil, reduce to simmer, and add the sherry, rosemary, half-and-half, salt and pepper.<br \/>\nTaste and correct the seasonings on the sauce.<br \/>\nAfter the broth has become quite thick, fold in the veggies and turkey and continue to heat for 10 minutes.<\/p>\n<p><strong>Into the oven<\/strong>Pour potpie mixture into the pie plate with crust on the bottom, and top with the second layer of crust.<br \/>\nBake at 425 for 30 minutes. Serve right away, but be careful, it\u2019s hot.<br \/>\n<strong>Play With Your Food! <\/strong><br \/>\nThe veggies you choose are absolutely up to you.
