Enjoy the way the smell of the onions penetrate your home.<\/i><\/span><br \/>\n<span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><i><br \/>\n<\/i><\/span><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><i><br \/>\n<\/i><\/span><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b>You&#8217;ll Need<\/b><\/span><\/p>\n<ul>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">1 medium sweet onion, thinly sliced<\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">3 Tablespoons unsalted butter<\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">2 Tablespoons flour<\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">2 quarts chicken stock<\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">2 Tablespoons (about) Emmenthal or Swiss <\/span><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">cheese per person<\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">1 baguette toast round per person<\/span><\/div>\n<\/li>\n<\/ul>\n<div><\/div>\n<div style=\"text-indent: 0in;\"><b style=\"font-family: Arial, Helvetica, sans-serif;\">In A Skillet<\/b><\/div>\n<ul>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Saut\u00e9 onion in butter over a gentle medium flame until it softens (a good 15 minutes). Sprinkle in 2 tablespoons of flour and stir for another 2 minutes. <\/span><\/div>\n<\/li>\n<li>\n<div><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Add in chicken stock. Bring to a boil, and then simmer with the lid on. Allow this mixture a chummy sort of bubbling for another 40 minutes.<\/span><\/div>\n<\/li>\n<\/ul>\n<div style=\"text-indent: 0in;\"><span style=\"font-variant: small-caps; mso-bidi-font-style: italic; mso-bidi-font-weight: bold;\"><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">\u00a0<\/span><\/span><\/div>\n<div style=\"text-indent: 0in;\"><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b>By the Way<\/b><\/span><br \/>\n<span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b><br \/>\n<\/b><\/span><\/div>\n<p><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">As in other matters of the skillet, time and flavor trade off. Leave the onions on medium heat and let them slowly saut\u00e9, to mellow the floury taste. Likewise, after the stock goes in, allow the soup its full 40 minute covered cook time. You\u2019ll appreciate the results in the end. <\/span><\/p>\n<div style=\"text-indent: 0in;\"><b style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/>\n<\/b><b style=\"font-family: Arial, Helvetica, sans-serif;\">Ready the Remaining Parts<\/b><\/div>\n<div>\n<ul>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">As the soup comes along, grate the cheese, and then toast the bread (baguettes, not surprisingly, work best for this).<\/span><\/li>\n<li><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">Simply ladle the broth into oven-safe bowls, top with the toast, and sprinkle with enough cheese to just cover the bread. Broil until the cheese wants to be golden and the soup bubbles up the side of the dish.<\/span><\/li>\n<\/ul>\n<\/div>\n<div><\/div>\n<div style=\"text-indent: 0in;\"><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b>Play With Your Food!<\/b><\/span><br \/>\n<span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\"><b><br \/>\n<\/b><\/span><\/div>\n<p><span style=\"font-family: 'arial' , 'helvetica' , sans-serif;\">There\u2019s a lot you can do with this soup. Throw in some sliced mushrooms, or even the chicken meat, just after the flour addition.
