Check the clarity of the eyes &#8212; that&#39;s the only way to assess freshness.<\/p>\n<p>We put them in foil, w butter, white balsamic vinegar, thyme, S&amp;P, and a splash of white wine. Once the foil was crimped closed, it went onto the coals for 10 minutes. <\/p>\n<p>Easy. Fresh.
