This year try throwing more veggies on the grill.\u00a0<\/i><i>This recipe is quite delicious and works as a starter or a side dish.<\/i><br \/>\n<i><br \/>\n<\/i><i><br \/>\n<\/i><strong>You\u2019ll Need<\/strong><\/p>\n<ul>\n<li>3 tablespoon extra virgin oil<\/li>\n<li>1 tablespoon fresh oregano leaves, chopped<\/li>\n<li>2 medium eggplants<\/li>\n<li>\u00bd teaspoon salt and a couple of extra pinches<\/li>\n<li>\u00bc teaspoon freshly ground pepper<\/li>\n<li>\u00bc cup crumbled feta cheese<\/li>\n<li>1 medium tomato, diced<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ul>\n<li>Cut eggplant lengthwise and sprinkle each half with a \u00bc teaspoon salt.<\/li>\n<li>Next, cut into \u00bd inch thick slices.<\/li>\n<li>In a bowl, combine 2 tablespoons olive oil, feta cheese, tomatoes, oregano and rest of salt.<\/li>\n<li>Brush eggplant with olive oil and add pepper.<\/li>\n<li>Place the eggplant on a hot grill, cover and let cook for 5 minutes before turning over.<\/li>\n<li>Cook for another 3 to 4 minutes or until tender and\/or browned.<\/li>\n<li>Transfer eggplant to a platter and cover with feta cheese mixture.<\/li>\n<\/ul>\n<p><a href=\"https:\/\/twitter.com\/willclower\" data-size=\"large\" data-show-count=\"false\">Follow @willclower<\/a><\/p>\n<p>For more information:\u00a0<a href=\"https:\/\/www.willclower.com\/\">Click here to visit Will Clower&#8217;s website.<\/a><\/p>\n<div><\/div>\n<p><a href=\"http:\/\/willclowerblog.blogspot.com\/\" target=\"_blank\"><img data-recalc-dims=\"1\" decoding=\"async\" style=\"border: 0px;\" src=\"https:\/\/i0.wp.com\/www.willclower.com\/blog\/wp-content\/uploads\/2015\/07\/WillClowerOnTheCultureOfHealth.1-12.gif?w=735&#038;ssl=1\" alt=\"Will Clower Articles\" \/><\/a><\/p>\n<div><\/div>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s grilling season!
