It&#8217;s also a wonderful food to aid in care for your cholesterol.<\/span><\/em><br \/><span style=\"font-family: Arial, Helvetica, sans-serif;\"><br \/><\/span><b><span style=\"font-family: Arial, Helvetica, sans-serif;\">You\u2019ll Need<\/span><\/b><\/p>\r\n<ul>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">3 medium eggplants<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 \u00bd teaspoons coarse salt<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc cup olive oil<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 \u00bd cups tomato sauce<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">\u00bc teaspoon pepper<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 teaspoon red pepper flakes<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">2 teaspoons ground cinnamon<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">1 Tablespoon crushed dried mint<\/span><\/li>\r\n<\/ul>\r\n<p><b><span style=\"font-family: Arial, Helvetica, sans-serif;\">Directions<\/span><\/b><\/p>\r\n<ul>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Slice the eggplants crosswise into 1 1\/2-inch-thick pieces.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Sprinkle them with 2 teaspoons of the salt and let stand for 15 minutes.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Then rinse eggplants under cold water and dry well.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Heat the oil in a skillet and lightly brown eggplant slices over moderate heat for 3 minutes.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Remove and put into a serving bowl.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Cool.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Put the tomato sauce, pepper, red pepper flakes, cinnamon, mint and remaining 1\/2 teaspoon of salt, in a pan.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Simmer over low heat for 10 minutes, which is long enough to integrate the flavors.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Pour this over the eggplant; refrigerate until ready to use.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">The salad can remain in the refrigerator for several days.<\/span><\/li>\r\n<li><span style=\"font-family: Arial, Helvetica, sans-serif;\">Serve cold or at room temperature.<\/span><\/li>\r\n<\/ul>\r\n<p>&nbsp;<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>&nbsp;<\/p>\r\n<div>\u00a0<\/div>\r\n<p>&nbsp;<\/p>\r\n<p>&nbsp;<\/p>\r\n","protected":false},"excerpt":{"rendered":"<p>A wonderful way to prepare eggplant is as a side dish or a starter to a meal.
