But it also works perfectly for a side dish year round too.<\/i><br \/>\n<strong><br \/>\n<\/strong><strong>You\u2019ll Need<\/strong><\/p>\n<ul>\n<li>4 small unpeeled sweet potatoes<\/li>\n<li>\u00bd cup golden raisins<\/li>\n<li>2 Tablespoons brown sugar<\/li>\n<li>1\/4 teaspoon ground cinnamon<\/li>\n<li>1\/2 cup unsweetened crushed pineapple, drained<\/li>\n<li>2 Tablespoons pecans, chopped<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ul>\n<li>Place potatoes on a baking sheet.<\/li>\n<li>Bake at 400 degrees F for 1 hour or until done.<\/li>\n<li>Let cool 15 minutes.<\/li>\n<li>Cut each potato in half lengthwise; carefully scoop pulp into bowl, leaving shells intact.<\/li>\n<li>Mash pulp; stir in raisins, sugar, cinnamon and pineapple.<\/li>\n<li>Spoon into shells; sprinkle with pecans.<\/li>\n<li>Bake at 400 degrees for 15 minutes or until thoroughly heated.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is another great side dish to complement the Thanksgiving feast.
