{"id":165,"date":"2015-11-13T17:00:00","date_gmt":"2015-11-13T17:00:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2015\/11\/13\/cranberry-pumpkin-muffins\/"},"modified":"2017-01-23T08:32:00","modified_gmt":"2017-01-23T13:32:00","slug":"cranberry-pumpkin-muffins","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=165","title":{"rendered":"Cranberry-Pumpkin Muffins"},"content":{"rendered":"<p><i>This is a fun dish to share at a work potluck or even for a holiday themed brunch.<\/i><\/p>\n<p><strong>You\u2019ll Need:<\/strong><\/p>\n<ul>\n<li>1 cup flour<\/li>\n<li>\u00bd cup whole wheat flour<\/li>\n<li>\u00bd cup sugar<\/li>\n<li>\u00be teaspoon cinnamon<\/li>\n<li>\u00bd teaspoon baking powder<\/li>\n<li>\u00bd teaspoon baking soda<\/li>\n<li>A pinch of allspice<\/li>\n<li>\u00bc teaspoon salt<\/li>\n<li>\u00bc cup butter<\/li>\n<li>1 \u00bc cup pumpkin; thick puree<\/li>\n<li>1 egg<\/li>\n<li>1 cup cranberries, cleaned halved<\/li>\n<\/ul>\n<p><strong>Directions: <\/strong><\/p>\n<ul>\n<li>Preheat oven to 350<\/li>\n<li>In a large bowl combine the flours, sugar, cinnamon, baking powder, baking soda, allspice and salt. Stir the ingredients to mix them well.<\/li>\n<li>Add the butter, pumpkin, and egg stirring the ingredients till they are just moist.<\/li>\n<li>Stir in the cranberries.<\/li>\n<li>Spoon the batter into 24 greased muffin cups.<\/li>\n<li>Place the muffin tins in the hot oven.<\/li>\n<li>Bake for 40 minutes or till tester inserted in the center come out clean.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This is a fun dish to share at a work potluck or even for a holiday themed brunch.
