First, they\u2019re so savory, crispy, and warm \u2014 exactly what I crave when the nights get cooler. There\u2019s something comforting about pulling a tray of caramelized carrots, parsnips, and sweet potatoes out of the oven, with all those golden edges begging to be tasted.<\/span><\/p>\n<p><span style=\"font-family: verdana, geneva, sans-serif;\">They\u2019re also my favorite dish to bring when friends invite us over. Everyone brings something, and this always fits right in. It\u2019s easy to throw together, and with just a couple of simple tricks, it turns into a guaranteed crowd-pleaser.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: verdana, geneva, sans-serif;\"><strong>What You\u2019ll Need<\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">2 carrots, peeled and cut into chunks<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">2 parsnips, peeled and cut into chunks<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">1 sweet potato, peeled and cubed<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">1 red onion, cut into wedges<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">3 tbsp olive oil<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">1 tsp salt<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">\u00bd tsp black pepper<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">1 tsp fresh thyme or rosemary (optional)<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">1 lemon (optional, for finishing)<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: verdana, geneva, sans-serif;\"><strong>What You\u2019ll Do<\/strong><\/span><\/p>\n<ol>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Preheat oven to 400\u00b0F (200\u00b0C).<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Place all vegetables on a large baking sheet.<\/span><\/li>\n<li><span style=\"font-family: verdana, geneva, sans-serif;\">Drizzle with olive oil, then sprinkle with salt, pepper, and herbs.
