So make extra and have some lunches for future meals.<\/i><br \/>\n<b><br \/>\n<\/b><b>You&#8217;ll Need<\/b><br \/>\n\u00b7 1 pound dried navy beans<br \/>\n\u00b7 2 onions, chopped<br \/>\n\u00b7 2 celery stalks with leaves, chopped<br \/>\n\u00b7 2 carrots, peeled and diced<br \/>\n\u00b7 4 sprigs fresh parsley, chopped<br \/>\n\u00b7 1 cup chopped, drained tomatoes<br \/>\n\u00b7 1 bay leaf<br \/>\n\u00b7 2 sprigs fresh mint or thyme<br \/>\n\u00b7 1\/3 cup olive oil<br \/>\n\u00b7 Salt and pepper to taste<\/div>\n<p>&nbsp;<\/p>\n<div><\/div>\n<p>&nbsp;<\/p>\n<div><b>Directions<\/b><br \/>\n\u00b7 Wash beans and soak overnight in cold water.<br \/>\n\u00b7 The next day, in a soup kettle, bring the beans to a boil in the soaking water.<br \/>\n\u00b7 Skim off the foam, then add the remaining ingredients, cover, and simmer gently until the beans are tender, about 3 hours.<br \/>\n\u00b7 Serve hot.<\/div>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Soup is just what the weather ordered.
