At the end of summer, you may feel like you\u2019re just over tomatoes.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">I personally don\u2019t get that because \u2026 tomatoes \u2026 but most &#8220;normal humans&#8221; need something more fun and tasty to do with them. <\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">So here\u2019s an Italian twist that seriously needs to become part of your regular rotation:<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Enjoy, and let me know how you like it!<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">~Will<\/span><\/p>\n<\/div>\n<div><\/div>\n<div class=\"ERSServes\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Serves:\u00a0serves 4-6<\/span><\/div>\n<div><\/div>\n<\/div>\n<div class=\"ERSIngredients\">\n<div class=\"ERSIngredientsHeader ERSHeading\"><strong><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">You&#8217;ll Need: <\/span><\/strong><\/div>\n<ul>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">either 8-10 Roma tomatoes, or a few cups of cherry tomatoes, split<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">olive oil<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">salt &amp; pepper<\/span><\/li>\n<\/ul>\n<ul>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1lb thin past like angel hair pasta (or just go with your favorite)<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">4 cloves garlic, minced<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/4 cup-ish olive oil\u00a0<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">fresh lemon juice &amp; zest<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">2 tablespoons of capers<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">toasted pine nuts<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">a handful of fresh basil<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">red pepper flakes<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">salt &amp; pepper, to taste<\/span><\/li>\n<li class=\"ingredient\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">parmesan cheese<\/span><\/li>\n<\/ul>\n<\/div>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">What You&#8217;ll Do<\/span><\/strong><\/p>\n<div class=\"ERSInstructions\">\n<ol>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Preheat oven to 200. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Drizzle tomatoes with olive oil, salt &amp; pepper. Put onto a roasting pan and into the oven. Smaller tomatoes will need about 3 hours. But bigger fatter tomatoes will need closer to 6 hours, making this a really good weekend thing to do.\u00a0<\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Bring a pan of pasta water to boil with a couple of Tablespoons of salt. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Cook the pasta in the salty water until al dente. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Strain the pasta water off, but reserve some of the starchy water for later.<\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">In a large skillet, heat enough olive oil so it coats the bottom of the pan. When the oil gets all shimmery, add the garlic and red pepper flakes (estimate how much you need, based on your spice tolerance. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Heat the garlic and red pepper flakes until fragrant (about 30 seconds). <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add the pasta and toss, along with about 1\/4 cup of the pasta water. Cook this, turning the pasta as you go, until the pasta is just cooked through (about another 3 minutes).\u00a0 <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Taste and correct the seasonings with salt and pepper (keep in mind that the cheese you will add at the end will also be salty, so under-do the salt to begin with. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Remove from heat, add a few big squeezes of lemon, some zest, and stir in capers, pine nuts, fresh basil, and the tomatoes. <\/span><\/li>\n<li class=\"instruction\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">At the end, give it a drizzle of olive oil, and a couple of tablespoons (or more!!) of grated parmesan cheese.<\/span><\/li>\n<li>Stir all together, taste, and correct the seasonings.<\/li>\n<\/ol>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<div id=\"AdThrive_Recipe_2_desktop\" class=\"adthrive-ad adthrive-recipe adthrive-recipe-2 noskim adthrive-ad-cls\" data-google-query-id=\"COm268S6h4gDFROIrAIdAlcJJQ\"><\/div>\n<div class=\"ERSNotesDiv\">\n<div class=\"ERSNotes\"><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>What do you do with those \u201cend of the summer\u201d tomatoes?
