We chose penne because it holds the lemony sauce so well!\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">You&#8217;ll Need:\u00a0<\/span><\/strong><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\"><span style=\"text-decoration: underline;\">For The Pasta:<\/span> <\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">2 cups (16oz) Penne<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">For The Primavera Veggie Part:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/2 cup mushrooms, sliced<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/2 cup zucchini, cut into bite-sized coins<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/2 cup broccoli, cut into bite sized-wedges<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/2 cup asparagus, cut into bite sized segments<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">10 cherry tomatoes, halved<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Salt and black pepper to taste<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">The All Important Sauce:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">2 Tbsp unsalted butter<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">2 Tbsp onion, minced<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">4 garlic cloves, minced<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">A sprinkle of crushed red pepper flakes, to taste<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1 cup cream<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/3 cup pasta water<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">2 tablespoon lemon juice, to taste<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">1\/2 cup shredded Parmesan cheese<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">To Finish:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">\u00bc cup basil, chopped<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Even more parmesan cheese, for garnish<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Crushed red pepper flakes, for garnish<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\"><strong>What You\u2019ll Do<\/strong><\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">First, start your pasta water boiling. Be sure to add a couple of teaspoons of salt. After about 10 minutes, check the pasta for doneness. When it is just al dente, pull it out into a bowl, and reserve that lovely starchy pasta water.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Meanwhile, as the water\u2019s coming to boil, prep all your ingredients by getting everything chopped, grated, and ready for adding as this dish comes together.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">NOTE: <\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">In this recipe, you will initially undercook the veggies so they\u2019re almost done, but not quite, so they can finish cooking in the final sauce.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add butter to a large sauce pan, and saute the veggies. Those items that require a longer cooking time will go first: broccoli, asparagus, (bell pepper, if using). Give those about 2 minutes, then add the mushrooms and zucchini. Saute until the zucchs are almost but not quite finished cooking through.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Remove the veg to a plate.<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\"><u>Now For The Cream Sauce:<\/u><\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">In that same pan, melt the butter over a medium flame.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add in the garlic and onions for a couple of minutes, then add the cream and Parmesan.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Stir these until smooth, and then add the cooked pasta back into the cream sauce.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add the 1\/3 cup of starchy pasta water, stirring it into the matrix.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">NOTE:<\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">If the sauce is too thin, add a sprinkle of Parm, mix through and reassess.\u00a0<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">If the mix is too thick, add a splash of pasta water, mix through and reassess.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Once you get the consistency of the sauce the way you want it, add in the veggies and stir through the sauce.<\/span><\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add the lemon juice, and then correct the seasonings (salt, pepper).<\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Finish The Dish:<\/span><\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Add the cut cherry tomatoes and basil leaves. Stir them through the simmering sauce until the basil is incorporated and the tomatoes are warmed through.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Serve with crusty bread in the favorite Italian piazza of your imagination &#x1f609;<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">PLAY WITH YOUR FOOD:<\/span><\/p>\n<ul>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">In this recipe we don\u2019t have you add salt until late in the game. That\u2019s because you add 2 sources of salt that don\u2019t come from your shaker: the pasta water, and Parm.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Only after those are in and blended do you want to taste and correct for the salt content.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif;\">Lemon lends amazing flavor on its own, but its citric acid also enhances the flavors of the dish it goes into.
