{"id":131,"date":"2023-01-20T12:00:00","date_gmt":"2023-01-20T17:00:00","guid":{"rendered":"https:\/\/www.willclower.com\/blog\/2016\/01\/15\/tuscan-bean-soup\/"},"modified":"2023-01-05T13:25:50","modified_gmt":"2023-01-05T18:25:50","slug":"tuscan-bean-soup","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=131","title":{"rendered":"Tuscan Bean Soup"},"content":{"rendered":"<p><i>This is a delightful soup that incorporates beans into the diet and the leftovers taste even better.<img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-4959\" src=\"https:\/\/i0.wp.com\/www.willclower.com\/blog\/wp-content\/uploads\/2016\/09\/tuscan-bean-soup-225x300.jpg?resize=225%2C300&#038;ssl=1\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.mymedwellness.com\/blog\/wp-content\/uploads\/2016\/09\/tuscan-bean-soup.jpg?resize=225%2C300&amp;ssl=1 225w, https:\/\/i0.wp.com\/www.mymedwellness.com\/blog\/wp-content\/uploads\/2016\/09\/tuscan-bean-soup.jpg?w=480&amp;ssl=1 480w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/i><br \/>\n<strong><br \/>\n<\/strong><strong>You\u2019ll Need<\/strong><\/p>\n<ul>\n<li>2 slices bacon, chopped<\/li>\n<li>2 Tablespoons olive oil<\/li>\n<li>1 carrot, chopped<\/li>\n<li>1 stalk of celery, chopped<\/li>\n<li>1 medium onion, chopped<\/li>\n<li>2 Tablespoons flour<\/li>\n<li>2 Tablespoons tomato paste<\/li>\n<li>3 cups beef broth<\/li>\n<li>2 cups water (more if needed)<\/li>\n<li>2 cups navy beans, cooked (save bean juice)<\/li>\n<li>2 teaspoons dried rosemary<\/li>\n<li>2 Tablespoons chopped parsley<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>\u00bc pound elbow macaroni or Arborio rice<\/li>\n<li>1\/3 cup freshly grated parmesan or Asiago cheese<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ul>\n<li>In large pot, cook the bacon until crisp.<\/li>\n<li>Pour off the fat and add olive oil and cook the carrot, celery and onion until slightly soft.<\/li>\n<li>Stir in flour and tomato paste.<\/li>\n<li>Add beef broth, bean juice\/water, rosemary, parsley, garlic, salt and pepper.<\/li>\n<li>Simmer slowly until the vegetables are tender, adding water as needed.<\/li>\n<li>Add macaroni and cook until tender, stirring frequently, as it sinks and sticks.<\/li>\n<li>Add water, if needed.<\/li>\n<li>Add the beans and heat through.<\/li>\n<li>Taste for adequate seasoning.<\/li>\n<li>If soup is not thick, puree one third of it and return the puree to the pot.<\/li>\n<li>Serve soup with a bowl of grated cheese.<\/li>\n<\/ul>\n<div><\/div>\n<div>\n<div><\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>This is a delightful soup that incorporates beans into the diet and the leftovers taste even better.
