{"id":12295,"date":"2023-05-09T22:20:57","date_gmt":"2023-05-10T02:20:57","guid":{"rendered":"https:\/\/www.mymedwellness.com\/blog\/?p=12295"},"modified":"2023-05-17T21:27:32","modified_gmt":"2023-05-18T01:27:32","slug":"salmorejo","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=12295","title":{"rendered":"Salmorejo"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2\u00a0pounds\u00a0ripe tomatoes<\/li>\n<li>2\u00a0garlic cloves (or one garlic clove and one shallot)<\/li>\n<li>3 slices of white bread<\/li>\n<li><sup>1<\/sup>\/<sub>2<\/sub>\u00a0cup\u00a0extra-virgin olive oil<\/li>\n<li>1\u00a0teaspoon\u00a0salt<\/li>\n<li>1 tablespoon cider or sherry vinegar<\/li>\n<li>Garnishes of choice (see below for suggestions)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ul>\n<li>In a saucepan, boil 8 cups of water.<\/li>\n<li>To remove skins from tomatoes, make a cross with a knife on the bottom of each tomato then place them in the boiling water for 30 seconds.<\/li>\n<li>Carefully remove tomatoes from water and peel and quarter the tomatoes, then put them in a blender.<\/li>\n<li>Add the garlic cloves.<\/li>\n<li>Next briefly soak the bread in water for a few seconds, to get it soft enough to squeeze it through your hands and add it to the blender.<\/li>\n<li>Pur\u00e9e until smooth, about 3 minutes depending on your blender.<\/li>\n<li>Then oil, salt, and vinegar and puree for another 15 to 20 seconds.
