{"id":11727,"date":"2022-11-14T07:48:11","date_gmt":"2022-11-14T12:48:11","guid":{"rendered":"https:\/\/www.mymedwellness.com\/blog\/?p=11727"},"modified":"2022-11-09T16:49:56","modified_gmt":"2022-11-09T21:49:56","slug":"veggie-turkey-soup","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=11727","title":{"rendered":"Veggie Turkey Soup"},"content":{"rendered":"<p><b>Ingredients<\/b><\/p>\n<ul>\n<li>2\u00a0tablespoons olive oil<\/li>\n<li>\u00bd cup\u00a0onion,\u00a0finely chopped<\/li>\n<li>3\u00a0cloves\u00a0garlic,\u00a0finely minced<\/li>\n<li>1\u00a0cup\u00a0carrots, finely chopped<\/li>\n<li>\u00bd cup\u00a0celery,\u00a0finely chopped<\/li>\n<li>8\u00a0cups\u00a0chicken broth<\/li>\n<li>1\/2\u00a0cup dried\u00a0barley or 2 ounces pasta noodles<\/li>\n<li>2 cups\u00a0cooked, diced turkey<\/li>\n<li>\u00be to 1 cup corn, frozen and thawed<\/li>\n<li>1 large russet potato size, diced, cut into 1-inch cubes<\/li>\n<li>1 cup frozen or 2 cups fresh green veggie of choice: such as kale, spinach, broccoli, green beans<\/li>\n<li>Salt,\u00a0to taste<\/li>\n<li>Pepper,\u00a0to taste<\/li>\n<li>2 Bay leaves<\/li>\n<\/ul>\n<ul>\n<li>Heat oil in a large pot over medium heat.<\/li>\n<li>Add onion, garlic and cook until onion becomes slightly softened and garlic becomes fragrant, about 3 minutes.<\/li>\n<li>Add carrots, and celery, saute for another 1 minute.<\/li>\n<li>Add broth, barley or pasta, turkey, potato, salt, pepper, and bay leaf.<\/li>\n<li>Mix everything together and bring to a boil.<\/li>\n<li>Let it simmer uncovered for 30 to 40 minutes if using barley. And if using another pasta let soup develop flavors on simmer for approximately 20 minutes and then add in the pasta based on time amount it needs to cook.<\/li>\n<li>Then add in corn and spinach.<\/li>\n<li>If the soup starts to get too thick, you can mix in some more broth or water.
