{"id":11297,"date":"2023-02-15T12:00:00","date_gmt":"2023-02-15T17:00:00","guid":{"rendered":"https:\/\/www.mymedwellness.com\/blog\/?p=11297"},"modified":"2023-01-05T13:51:54","modified_gmt":"2023-01-05T18:51:54","slug":"corn-poblano-zucchini-medley-%ef%bf%bc","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=11297","title":{"rendered":"Corn, Poblano, Zucchini Medley \ufffc \u00a0"},"content":{"rendered":"\r\n<p><b>Ingredients<\/b><\/p>\r\n<ul>\r\n<li>2 cups zucchini, diced<\/li>\r\n<li>2\/3 cup corn, frozen or fresh<\/li>\r\n<li>1\/4 cup red onion, finely chopped<\/li>\r\n<li>1\/4 cup poblano pepper, diced<\/li>\r\n<li>2 tablespoons olive oil<\/li>\r\n<li>1 tablespoon taco seasoning<\/li>\r\n<li>1\/4 teaspoon salt<\/li>\r\n<li>1 tablespoon lime juice<\/li>\r\n<\/ul>\r\n<p><strong>Directions<\/strong><\/p>\r\n<ul>\r\n<li>Heat large skillet on low, add olive oil, after slightly heated, add in taco seasonings and let the spices infuse oil for a minute or so.<\/li>\r\n<li>Increase temperature of skillet to a medium-low, then add in onions and saute for another minute.<\/li>\r\n<li>Next add in poblanos.
