{"id":11110,"date":"2021-01-08T20:36:00","date_gmt":"2021-01-09T01:36:00","guid":{"rendered":"https:\/\/www.mymedwellness.com\/blog\/?p=11110"},"modified":"2022-03-08T20:46:00","modified_gmt":"2022-03-09T01:46:00","slug":"barley-chili","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=11110","title":{"rendered":"Barley Chili"},"content":{"rendered":"\n<p><strong>Ingredients<\/strong><strong><\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 Tablespoon olive oil<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 medium onion, diced<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>2 garlic cloves, diced<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>2 (14.5 ounce) cans diced tomatoes<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1\/2 cup barley<\/strong><\/p>\n\n\n\n<p>\u00b7\u00a0<strong>1 carrot, diced<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1\/2 jalapeno (or as much as you want) finely diced, deseeded<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 \u00bd tablespoons chili powder<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>2 teaspoons cumin, ground<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 \u00bd teaspoons paprika<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>\u00bd teaspoon cayenne<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>Salt<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 (14.5 ounce can) kidney beans, with liquid<\/strong><\/p>\n\n\n\n<p>\u00b7&nbsp;<strong>1 \u00bd cups cooked corn (fresh, frozen, or canned)<\/strong><\/p>\n\n\n\n<p><strong>1 cup water<\/strong><\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">Directions<\/span><\/p>\n\n\n\n<p>\u00b7&nbsp;Heat olive oil in a large pot over medium high heat.<\/p>\n\n\n\n<p>\u00b7&nbsp;Add carrot, jalapeno, garlic, and onion, cook, stirring frequently, until onions have become translucent, about 2-3 minutes.<\/p>\n\n\n\n<p>\u00b7&nbsp;Stir in barley, kidney beans, diced tomatoes, chili powder, cumin, paprika, cayenne pepper and 1cup water, season with salt, to taste and adjust seasonings how you see fit.<\/p>\n\n\n\n<p>\u00b7&nbsp;Bring to boil then reduce heat to low; simmer, covered, until thickened, about 30 minutes.
