It is also a nice balance for all the rich holiday foods.<\/em><\/p>\r\n<p><strong>Ingredients<\/strong><\/p>\r\n<ul>\r\n<li>1 cup lentils<\/li>\r\n<li>8 cups water<\/li>\r\n<li>1 large potato, diced<\/li>\r\n<li>\u00bd bunch Swiss chard, kale, or endive coarsely chopped<\/li>\r\n<li>1 medium onion, coarsely chopped<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<li>3 Tablespoons olive oil<\/li>\r\n<li>1\/8 cup to a \u00bc cup or more freshly squeezed lemon juice<\/li>\r\n<\/ul>\r\n<p><strong>Directions<\/strong><\/p>\r\n<ul>\r\n<li>In a pan start saut\u00e9ing onions in oil until golden brown. The longer they go, the more flavor.<\/li>\r\n<li>Now sort lentils and add to a stock pot; add water, cover, bring to a boil and then simmer until almost tender (approximately 15-20 minutes).<\/li>\r\n<li>Add diced potatoes to lentils; boil for 10 minutes. Add more water if necessary.<\/li>\r\n<li>Add salt and pepper to lentil pot to taste.<\/li>\r\n<li>Add chopped greens of choice to lentil mixture and cook for another 5 or so minutes.<\/li>\r\n<li>Now add the onions and oil.<\/li>\r\n<li>Add lemon juice.<\/li>\r\n<li>Taste and adjust lemon juice and salt and pepper to your liking.<\/li>\r\n<\/ul>\r\n<p>Soup freezes well.<\/p>\r\n<p><strong>Play with Your Food<\/strong><\/p>\r\n<p>Use a mixture of greens<\/p>\r\n","protected":false},"excerpt":{"rendered":"<p>Try this soup for a cold winter day.
