{"id":10769,"date":"2024-12-20T12:00:00","date_gmt":"2024-12-20T17:00:00","guid":{"rendered":"https:\/\/www.mymedwellness.com\/blog\/?p=10769"},"modified":"2024-11-14T15:04:35","modified_gmt":"2024-11-14T20:04:35","slug":"winter-salad","status":"publish","type":"post","link":"https:\/\/www.mymedwellness.com\/blog\/?p=10769","title":{"rendered":"Winter Salad"},"content":{"rendered":"\r\n<p><em>This recipe works wonderfully for daily meals or special holiday ones too!<\/em><\/p>\r\n<p><strong>You\u2019ll Need<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 cups Dino or Curly kale, chopped<\/li>\r\n<li>1 cup red cabbage, chopped<\/li>\r\n<li>3 cups green cabbage, chopped<\/li>\r\n<li>\u00bd grapefruit, chopped<\/li>\r\n<li>3 Tablespoons red onion, finely chopped<\/li>\r\n<li>1\/8 cup dried cranberries, chopped<\/li>\r\n<li>\u00bd cup candied walnuts (recipe below)<\/li>\r\n<li>4 Tablespoons olive oil<\/li>\r\n<li>2 Tablespoons apple cider vinegar<\/li>\r\n<li>1 Tablespoon honey<\/li>\r\n<li>Salt<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Directions<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Prepare walnuts.<\/li>\r\n<li>As the walnuts cool, in a large bowl, mix kale, cabbages, red onion, grapefruit and cranberries.<\/li>\r\n<li>Make dressing by whisking in a small bowl, olive oil, apple cider vinegar, honey, and a pinch of salt.<\/li>\r\n<li>Mix dressing with veggies and top with candied walnuts.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<p><strong><span style=\"text-decoration: underline;\">Candied Walnuts<\/span><\/strong><\/p>\r\n\r\n\r\n\r\n<p><strong>You\u2019ll Need<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>\u00bd cup walnuts<\/li>\r\n<li>1 Tablespoon brown sugar<\/li>\r\n<li>Pinch of salt<\/li>\r\n<li>1\/8 cup water<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Directions<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Preheat oven to 300.<\/li>\r\n<li>Place all ingredients into a small pot. Place on stovetop burner and bring the water to a boil.<\/li>\r\n<li>Then lower the heat to medium and stir constantly.\u00a0<\/li>\r\n<li>Stir until all the water has evaporated and a coating has formed on the nuts. Turn off the heat.<\/li>\r\n<li>Spread the walnuts evenly on a baking tray, covered with parchment paper (or a silicon baking sheet).<\/li>\r\n<li>Bake for 12-18 minutes. Cooking time will vary depending on oven, check to make sure nuts don\u2019t burn and you want to make sure coating has solidified.<\/li>\r\n<li>Take them out and let them cool and they will crisp up.<\/li>\r\n<\/ul>\r\n","protected":false},"excerpt":{"rendered":"<p>This recipe works wonderfully for daily meals or special holiday ones too!
